350g (Butter and Margarine) (Either or combination of both)
350g flour
150g -200g sugar
1 tsp flavoring e.g. lemon and almond
1 ½ teaspoon baking powder
7 eggs
250g Mixed Fruit
200g Cherry
½ bottle Brandy e.g. 50l Brandy
3 Tbsp. Brownie (or more as desired)
5 Tbsp. Golden syrup
3 Tbs. Treacle (optional)
Spices: - ½ tsp Cinnamon, 1tsp Nutmeg.
PROCEDURE
1. Soak mixed fruit in brandy prior to baking day.
2. Cream margarine and sugar together until fluffy, creamy and well mixed.
3. Add baking eggs, mix gradually, add flavoring – combination of nutmeg, lemon, etc (your choice)
4. Add baking powder and preservative into flour and sieve.
5. Gradually add flour mixture into creamed mixture, add brownie, Golden syrup fruit soaked in brandy, interchanging each addition time after time until all flour and soaked fruits have been added. Add brownie a little at a time until the desired color is achieved. Add golden syrup according to the quantity of brownie to stabilize the sweet taste and give it a moist texture.
6. Line an 8’’ pan with grease proof or brown paper, then grease.
7. Pour batter mixture into pan.
8. Bake fruit cake in a moderately hot oven until cooked for about 1 ½ hrs
9. Cool on a wire rack.
10.For Christmas presentation, arrange cherries nuts etc on top.
